Lemon Garlic Chicken

Lemon Garlic Chicken

6 chicken thighs
4 lemons
About 10 garlic cloves
3 Tbsp of oregano
2tsp of onion powder
2 tsp of Paprika
3 TBSP butter (optional)
Preheat oven to 350.

Layer the bottom of a baking dish, or cast iron skillet with lemon slices and garlic cloves (reserve 1 lemon).

Season the chicken front and back and arrange it on top of the garlic and lemon. Place butter on each piece of chicken and the remaining lemon slices. Cover with heavy foil and bake for 30 mins.
Remove the foil and broil 10 minutes, flip the chicken and broil for an additional 5 mins. This will give it a nice crust. Let the chicken sit for 10 minutes before serving so that all the juices return to the chicken.

*The chicken will create a nice sauce that is moderately thick. You can easily thicken it further by whisking a few tsp of cornstarch in chicken broth, and pouring it into the pan drippings. You can then return the chicken back to the pan, or use it or rice, potatoes or veggies.
