Easy as Pie Mini Apple Pies

I am not a baker, everyone who knows me knows, baking is not what I do. But I have dreams of being a great American Baker. Or at least that Mom who makes the best treats on the block. In reality I get in my kitchen preheat the oven and then my brain in too exhausted from the thought of all the required measuring it takes to bake. I have no patience for all of that. So when I want to bake I have to think outside of the traditional stay in the lines baking. I call fake baking.
The other day I this idea for a quick, and I do mean quick mini pie.

I went to Aldi and got
1 can of apple pie filling
1 package of premade refrigerated pie dough

At home I already had 1 lemon,
and pumpkin pie spice

Preheat the over to 425
Bring your dough to room temperature, then unroll it.
Use a glass or something to cut out circles of dough. Place each circle of dough into a cupcake pan.

In a bowl combine a can of apple filling 1 tsp of pumpkin pie spice, and about a tablespoon of lemon juice. Combine well, and then with the back of your spoon break the apples into smaller bite size pieces. Spoon into each cup, until just below the rim. You could get fancy and fold the edges into a a design or something if you wanted to.


Bake @425 for about 25 minutes.
Remove from the oven, allow it to cool for a few minutes and then place on a plate.
I made a few of these with an oatmeal crumble on top, which I can’t remember all of what I put in it, so we will just glaze over that.
